- Preheat oven to 400°F. Lightly grease a baking dish with olive oil or cooking spray.
- In a small bowl, combine chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, and black pepper. Stir until evenly blended.
- Place each chicken breast between two sheets of plastic wrap and pound to approximately 3/8 inch thickness using a meat mallet or rolling pin.
- Drizzle the flattened chicken breasts with 1 tbsp olive oil and sprinkle half of the spice blend evenly over both sides of each piece.
- Heat the remaining 1 tbsp olive oil in a large skillet over medium heat. Add the sliced bell peppers and red onion, sautéing for 3 to 4 minutes until just tender. Remove from heat and toss with the remaining spice blend.
- Lay each seasoned chicken breast flat. Distribute the sautéed pepper and onion mixture evenly across each breast, then sprinkle with shredded cheese.
- Tightly roll up each chicken breast and secure with toothpicks to hold their shape. Arrange seam side down in the prepared baking dish.
- Bake for 25 to 30 minutes until the chicken is fully cooked through and juices run clear when pierced.
- Allow the roll ups to rest for 5 minutes. Remove toothpicks, slice into pinwheels, and garnish with fresh cilantro and lime wedges if desired.
