# How to Make It:

01 - Heat vegetable oil in a large skillet over medium-high heat. Add chicken pieces and sauté 4-5 minutes until golden on all sides. Remove and set aside.
02 - In the same skillet, add onion and bell pepper. Cook 3-4 minutes until softened.
03 - Stir in garlic, chili (if using), cumin, paprika, and coriander. Sauté 1 minute until fragrant.
04 - Return chicken to pan, pour in coconut milk, and season with salt and pepper. Bring to simmer, lower heat, and cook 15-20 minutes until chicken is cooked through and sauce thickens slightly, stirring occasionally.
05 - Stir in lime zest, juice, and chopped cilantro.
