02 - 4 tbsp unsalted butter, softened
03 - 1½ tsp Cajun seasoning
04 - ½ tsp smoked paprika
05 - ¼ tsp garlic powder
06 - ¼ tsp onion powder
07 - ¼ tsp salt
08 - ⅛ tsp freshly ground black pepper
09 - 1 tbsp fresh parsley, finely chopped plus extra for garnish
10 - 1 tbsp lime juice

→ Optional Garnishes

11 - Lime wedges
12 - Extra chopped parsley

# How to Make It:

01 - Preheat oven to 425°F or prepare grill for medium-high heat.
02 - In a small bowl, mix softened butter with Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, pepper, chopped parsley, and lime juice until well combined.
03 - Place corn cobs on a foil-lined baking sheet. Brush each ear generously with the Cajun spiced butter, ensuring all sides are coated.
04 - Roast in preheated oven for 20–25 minutes, turning halfway through, until corn is tender and slightly charred. Alternatively, grill directly on grates, turning every few minutes for even charring.
05 - Remove from oven or grill. Brush with remaining Cajun butter and sprinkle with extra parsley. Serve hot with lime wedges on the side.

# Expert Advice:

01 -
  • The smoky spice blend transforms ordinary sweet corn into something absolutely addictive
  • It comes together in under 10 minutes of prep but tastes like you spent hours perfecting it
02 -
  • Do not skip turning the corn halfway through or you will end up with uneven cooking and sad, pale patches
  • The butter will burn if your oven runs hot, so keep an eye on it during the last 5 minutes
03 -
  • Make a double batch of the spice butter and freeze half for next time
  • If your corn seems too thick, cut the ears in half crosswise before roasting for easier handling
