# Expert Advice:

01 -
  • Raw radishes can taste aggressive but roasting tames that peppery heat into a mild, almost sweet side that even picky eaters will try.
  • The whole thing comes together on one pan with five minutes of actual effort, which makes it my lazy weeknight hero.
02 -
  • Do not crowd the pan or the radishes will steam instead of roast and you will miss that caramelized exterior completely.
  • A squeeze of fresh lemon juice right after they come out of the oven brightens the whole dish in a way that will surprise you.
03 -
  • Halving the radishes instead of quartering them keeps the interior creamy while still getting enough surface area for browning.
  • Swapping parsley for fresh chives or dill at the end gives the dish an entirely different personality worth exploring.
