Winter Kale Cranberries Salad (Printable)

01 - 1 large bunch lacinato or curly kale (approximately 8 cups), stems removed and finely chopped

03 - 80 ml toasted pecans or walnuts, roughly chopped (⅓ cup)
04 - 1 small apple, cored and thinly sliced

05 - 80 ml crumbled feta or goat cheese (⅓ cup)

→ Dressing

06 - 60 ml extra-virgin olive oil (¼ cup)
07 - 30 ml fresh lemon juice (2 tablespoons)
08 - 15 ml apple cider vinegar (1 tablespoon)
09 - 15 ml pure maple syrup or honey (1 tablespoon)
10 - 5 ml Dijon mustard (1 teaspoon)
11 - Salt and freshly ground black pepper, to taste

01 - Place the chopped kale in a large bowl, drizzle with a small amount of olive oil and a pinch of salt. Massage the kale with your hands for 2 to 3 minutes until it softens and darkens.

03 - Add dried cranberries, toasted nuts, apple slices, and cheese if using, to the massaged kale.
04 - Pour the prepared dressing over the salad and toss thoroughly to ensure even coating.
